Ingredients
- Gurday kaleji (liver and kidney)
- Kaleji (liver)mutton 1/2 kg
- Gurday (kidney)mutton 1/2kg
- Vinegar/4cup
- Water as required
- Cooking oil1/2 cup
- Onion 4medium chopped
- Tomato puree2 cup
- Ginger garlic paste 2tbsp
- Green chillies 4-5
- Yogurt 1cup
- Redchilli 2tsp
- Salt 2tsp
- Turmeric powder 1tsp
- Coriander powder 2tsp
- Cumin powder1/2tsp
- Fanugreek1/2tsp
- Whole spice 1/2tsp
- Water2tbsp
Directions
1In a bowl add liver and kidney vinegar and water and let it rest for 30mins.
2In a bowl add liver kidney, 1cup of yoghurt, Fenugreek 1/2tsp, Whole spice 1/2tsp,1tsp red chilli powder,1/2tsp turmeric powder,1tsp coriander powder and mix well.

In a pan add onion and fry until turn golden brown then add ginger garlic paste 2tbsp mix well and then add 1tsp redchilli powder, 1tsp coriander powder, turmeric powder1/2tsp,1/4 cup of water then add 2cup blended tomato and cook until oil separates then add marinated mutton organs and cook on a high flame until water dries and oil separates. add whole spice masala ½ tsp,1/2 tsp fenugreek and green chilies. In the end, add 2 tbsp. water in salt and dissolve and then add. cover and simmer it on a low flame for 5 mins.
